🍰 Passion Fruit Quark Cake with Apples

Ingredients
- 3 Eggs
- 1 Pinch Salt
- 100 g Whole Cane Sugar
- 1 Tbsp Lemon Juice
- 30 g Butter
- 500 g Low-fat Quark
- 50 g Whipping Cream
- 2 Tbsp Cornstarch
- 2 Tart Apples (Braeburn, Boskop)
- 3 Passion Fruits
Instructions
- 1. Separate the eggs. Carefully separate the yolks from the whites.
- 2. Add a pinch of salt to the egg whites.
- 3. Whip the egg whites until stiff peaks form.
- 4. Whisk the egg yolks with the sugar and lemon juice until frothy.
- 5. Melt the butter in a small saucepan over very low heat.
- 6. Stir the quark, cream, and melted butter into the yolk mixture.
- 7. Add the whipped egg whites to the quark mixture.
- 8. Sift the cornstarch over the mixture.
- 9. Gently fold in the egg whites and cornstarch until combined.
- 10. Peel the apples.
- 11. Halve the apples and remove the core.
- 12. Cut the apples into small cubes.
- 13. Place the apple cubes into the springform pan.
- 14. Distribute the apple cubes evenly in the pan.
- 15. Halve the passion fruits.
- 16. Scoop out the passion fruit pulp.
- 17. Place the pulp into a tall container.
- 18. Stir the pulp in the container.
- 19. Take two-thirds of the passion fruit pulp.
- 20. Stir this portion of pulp into the quark mixture.
- 21. Pour the quark mixture over the apples in the pan.
- 22. Spread the quark mixture evenly in the pan.
- 23. Place the remaining passion fruit pulp on top of the quark mixture.
- 24. Preheat the oven to 200 °C (180 °C with fan or gas mark 3).
- 25. Bake the cake for about 50 to 55 minutes.
- 26. Turn off the oven after the baking time.
- 27. Let the cake stand in the turned-off oven for another 5 minutes.
- 28. Remove the cake from the oven.
- 29. Let the cake cool down completely.
- 30. Serve the cake cold.
