  1. 1. Carefully cut the passion fruits in half.
  2. 2. Scoop out the insides of the shells with a teaspoon so they look like small bowls.
  3. 3. Place the pulp of the first passion fruit into a small bowl.
  4. 4. Place the pulp of the remaining four passion fruits into a second, larger bowl.
  5. 5. Separate the eggs by carefully separating the yolk from the white.
  6. 6. Place the egg whites into a tall container that is suitable for whipping.
  7. 7. Whip the egg whites stiff using the hand mixer.
  8. 8. Gradually stir in two-thirds of the sugar into the egg whites while whipping.
  9. 9. Place the quark (a type of fresh cheese) into a large mixing bowl.
  10. 10. Add the remaining sugar to the bowl.
  11. 11. Add the flour to the bowl.
  12. 12. Add the egg yolks to the bowl.
  13. 13. Add the pulp of the four passion fruits to the bowl.
  14. 14. Mix all ingredients thoroughly with the hand mixer.
  15. 15. Take the whipped egg whites and add them to the batter.
  16. 16. Gently fold the egg whites into the batter using a whisk.
  17. 17. Taste the batter and sweeten it with a few drops of sweetener if needed.
  18. 18. Place the paper liners into the muffin tin.
  19. 19. Carefully spoon the batter into the liners.
  20. 20. Smooth the surface of the batter in the liners.
  21. 21. Preheat the oven to 180 °C (160 °C for fan-assisted or Gas Mark 2–3).
  22. 22. Bake the muffins in the oven for 20 to 25 minutes.
  23. 23. Let the muffins cool down completely in the tin on a wire rack.
  24. 24. Carefully wash the berries under running water.
  25. 25. Remove any stems or leaves from the berries.
  26. 26. Cut the berries into smaller pieces if necessary.
  27. 27. Mix the berries with the remaining passion fruit pulp.
  28. 28. Distribute the berry mixture over the cooled muffins.
  29. 29. Now serve the tartlets.
