  1. 1. Put water and sugar in a pot.
  2. 2. Let the mixture boil for five minutes until the sugar has dissolved.
  3. 3. Stir the lemon juice into the hot syrup.
  4. 4. Let the syrup cool down completely.
  5. 5. Peel the mango and cut the flesh away from the hard pit.
  6. 6. Put the mango flesh and the cooled syrup into a tall mixing jug.
  7. 7. Puree the mixture with a hand blender until smooth.
  8. 8. Pour the puree into an ice cream maker.
  9. 9. Prepare the ice according to the machine's instructions.
  10. 10. Transfer the finished sorbet into a freezer container.
  11. 11. Store the sorbet in the freezer until you are ready to serve it.
  12. 12. Peel the remaining mango and remove the flesh from the pit.
  13. 13. Slice the flesh into thin pieces.
  14. 14. Scoop the sorbet into bowls.
  15. 15. Garnish the ice cream with the fresh mango slices.
  16. 16. Sprinkle finely chopped lemon balm leaves over the top.
