🍰 Fresh Mango Sorbet

Ingredients
- 125 ml water
- 100 g sugar
- juice (of one lemon)
- 1800 g ripe mango (3 ripe mangoes)
- some leaves of lemon balm
Instructions
- 1. Put water and sugar in a pot.
- 2. Let the mixture boil for five minutes until the sugar has dissolved.
- 3. Stir the lemon juice into the hot syrup.
- 4. Let the syrup cool down completely.
- 5. Peel the mango and cut the flesh away from the hard pit.
- 6. Put the mango flesh and the cooled syrup into a tall mixing jug.
- 7. Puree the mixture with a hand blender until smooth.
- 8. Pour the puree into an ice cream maker.
- 9. Prepare the ice according to the machine's instructions.
- 10. Transfer the finished sorbet into a freezer container.
- 11. Store the sorbet in the freezer until you are ready to serve it.
- 12. Peel the remaining mango and remove the flesh from the pit.
- 13. Slice the flesh into thin pieces.
- 14. Scoop the sorbet into bowls.
- 15. Garnish the ice cream with the fresh mango slices.
- 16. Sprinkle finely chopped lemon balm leaves over the top.
