  2. 2. Place the mango cubes, white wine, mustard seeds, and lemon juice into a pot.
  3. 3. Bring the mixture to a boil over medium heat.
  4. 4. Let the mixture simmer gently for about 5 minutes until soft.
  5. 5. Puree the soft mango mixture finely with a blender.
  6. 6. Strain the puree through a fine sieve to remove any coarse fibers.
  7. 7. Allow the strained mixture to cool down completely.
  8. 8. Mix the cooled mango mass with the mustard.
  9. 9. Season the mustard to taste with vinegar, salt, and pepper.
