Ingredients
- 1 mango
- 50 ml white wine
- 1 tbsp mustard seeds
- 1 tbsp lemon juice
- 100 g mustard (medium hot)
- vinegar
- salt
- pepper
Instructions
- 1. Peel the mango and cut the flesh into small cubes.
- 2. Place the mango cubes, white wine, mustard seeds, and lemon juice into a pot.
- 3. Bring the mixture to a boil over medium heat.
- 4. Let the mixture simmer gently for about 5 minutes until soft.
- 5. Puree the soft mango mixture finely with a blender.
- 6. Strain the puree through a fine sieve to remove any coarse fibers.
- 7. Allow the strained mixture to cool down completely.
- 8. Mix the cooled mango mass with the mustard.
- 9. Season the mustard to taste with vinegar, salt, and pepper.
