🍽️ Fresh Mango Salad with Rice Noodles and Beef

Ingredients
- 3 garlic cloves
- 2 red chili peppers
- 3 shallots
- 1 tsp sesame oil
- 0.5 tsp sea salt
- 120 g sugar
- 10 ml white wine vinegar
- 1 tbsp cornstarch
- 2 red onions
- 1 mango
- 2 handfuls mizuna (for garnish)
- 150 g rice noodles (vermicelli)
- salt
- 400 g beef fillet
- 2 limes
Instructions
- 1. Peel the garlic clove and dice it very finely.
- 2. Wash the chili peppers and remove the stems.
- 3. Slice the chili peppers into thin rings.
- 4. Peel the shallots and slice them into thin rings as well.
- 5. Heat the sesame oil in a pot.
- 6. Fry the shallots in the hot oil until lightly browned.
- 7. Add the diced garlic and the chili rings.
- 8. Sauté the vegetables until they become translucent.
- 9. Sprinkle sea salt and sugar over the mixture.
- 10. Pour in 180 milliliters of water.
- 11. Bring the sauce to a boil.
- 12. Dissolve the starch in one tablespoon of cold water.
- 13. Stir the starch solution into the boiling sauce to thicken it.
- 14. Remove the pot with the sauce from the heat.
- 15. Peel the red onions.
- 16. Halve the red onions.
- 17. Slice the red onions into thin strips.
- 18. Peel the mango.
- 19. Carefully cut the mango flesh away from the pit.
- 20. Slice the mango flesh into thin strips.
- 21. Wash the Mizuna (a type of leafy green vegetable).
- 22. Shake the Mizuna dry.
- 23. Cook the rice noodles in boiling salted water until al dente, as indicated on the package.
- 24. Drain the cooked rice noodles.
- 25. Rinse the rice noodles under cold water.
- 26. Let the rice noodles drain well.
- 27. Slice the beef fillet into finger-thick pieces.
- 28. Preheat a grill pan well.
- 29. Sear the beef slices in the hot grill pan briefly on both sides.
- 30. Slice the seared beef into thin strips.
- 31. Mix the sliced red onions, rice noodles, and Mizuna in a bowl.
- 32. Halve the limes.
- 33. Squeeze the lime juice over the noodle-onion mixture.
- 34. Place the salad mixture as a base on the plates.
- 35. Distribute the mango strips and beef strips over the salad.
- 36. Drizzle the prepared sauce over the dish.
- 37. Place the squeezed lime halves decoratively on the plate as a garnish.
