🍽️ Fresh Mango Salad with Fried Shrimp

Ingredients
- 8 larger shrimp (peeled, with tail end)
- 5 tbsp olive oil
- 1 garlic clove
- lime
- 1 spring onion
- 1 mango
- 2 tbsp white wine vinegar
- salt
- pepper (from the mill)
- 1 tsp maple syrup
- 1 chili pepper
- cilantro
Instructions
- 1. Mix two tablespoons of oil with finely chopped garlic and lime juice. Cut the shrimp open along the back, remove the black vein, and place them in the marinade. Toss to coat well and let them marinate for about 30 minutes.
- 2. Wash and trim the spring onions. Cut the white and light green parts into thin strips about 10 centimeters long and place them in a glass of ice water.
- 3. Peel the mango and cut the flesh into slices away from the pit.
- 4. Mix vinegar, salt, pepper, and syrup with two tablespoons of oil. Finally, adjust the seasoning of the dressing to taste.
- 5. Clean the chili pepper, cut it lengthwise, and remove the inside including all white membranes. Wash the pepper, cut it into fine longitudinal strips, and then halve these strips crosswise.
- 6. Fry the shrimp in one tablespoon of oil in a pan, cooking them vigorously for about 2 minutes on each side.
- 7. Remove the spring onions from the water and pat them dry with a kitchen towel.
- 8. Arrange the mango and shrimp on plates. Drizzle with the dressing and serve garnished with spring onions, chili strips, and coriander leaves.
