🍽️ Fresh Mango and Avocado Salad with Arugula and Peanuts

Ingredients
- 2 Oranges
- 1 red onion
- 1 ripe mango
- 1 ripe avocado
- 25 g peanut kernels (unsalted and coarsely chopped)
- 1 bunch arugula
- 3 spring onions
- 3 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Peel the oranges using a sharp knife. Carefully remove all white pith.
- 2. Carefully cut out the orange flesh segments between the membranes. Catch the released juice in a bowl.
- 3. Squeeze the empty orange peels by hand to extract the remaining juice.
- 4. Peel the red onion and slice it into thin rings.
- 5. Peel the mango and cut the flesh about 1 centimeter thick away from the pit.
- 6. Cut the mango pieces into small cubes.
- 7. Cut the avocado in half and remove the pit.
- 8. Carefully loosen the avocado flesh from the skin using a spoon.
- 9. Cut the avocado into approximately 1-centimeter cubes.
- 10. Wash the spring onions and remove the tough ends.
- 11. Slice the spring onions into thin rings.
- 12. Place the orange segments, mango cubes, onion rings, and avocado cubes into a large bowl.
- 13. Gently toss the ingredients together to avoid crushing them.
- 14. Mix the collected orange juice with olive oil, salt, and pepper.
- 15. Pour the dressing over the salad and mix everything well.
- 16. Wash the arugula and remove any wilted or damaged leaves.
- 17. Dry the arugula using a salad spinner or a kitchen towel.
- 18. Tear the arugula into bite-sized pieces by hand.
- 19. Arrange the arugula on the plates.
- 20. Place the mango salad on top of the arugula.
- 21. Sprinkle the finished salad with roasted peanuts.
- 22. Serve the salad immediately.
