🍽️ Lobster Salad on Mango Boats

Ingredients
- 2 cooked lobster (approx. 500 g each)
- 3 limes (juice)
- 1 tsp sea salt
- 6 tbsp olive oil
- 4 red chili peppers
- 4 tbsp freshly chopped cilantro
- 1 bunch mint
- pepper (from the mill)
- 2 tsp curry powder
- 3 mangoes
Instructions
- 1. Remove the meat from the lobster shell.
- 2. Cut the lobster meat into small bite-sized pieces.
- 3. Wash the chili peppers.
- 4. Slice the chili peppers into thin rings.
- 5. Wash the mint.
- 6. Finely chop half of the mint leaves.
- 7. Put lime juice, salt, and oil into a bowl.
- 8. Whisk the ingredients for the sauce well.
- 9. Set aside some mint leaves for decoration.
- 10. Add the remaining chopped mint to the sauce.
- 11. Add the coriander to the sauce.
- 12. Add the chili rings to the sauce.
- 13. Season the sauce with pepper.
- 14. Season the sauce with curry powder.
- 15. Put the lobster pieces into the marinade.
- 16. Let the lobster pieces marinate for about 1 hour.
- 17. Peel the mangoes.
- 18. Slice the mango flesh into strips from the pit.
- 19. Place one piece of lobster on a mango boat.
- 20. Garnish the salad with the reserved mint leaves.
