🍽️ Icy Mango and Date Delight

Ingredients
- 50 g dried mango
- 60 g dried dates (pitted)
- 30 ml Cointreau
- 3 eggs
- 100 g sugar
- 1 tbsp mango puree (jar)
- 300 ml whipping cream (min. 30% fat content)
- 1 packet cream stabilizer
- mango puree (from the jar, for serving)
- Cointreau (to taste)
Instructions
- 1. Place the mango pieces in a bowl and cover them with hot water. Let them soak for 30 minutes. Remove the mango pieces and squeeze them well to remove excess water. Finely chop the mango. Finely chop the dates as well. Put the chopped dates and mango into a small bowl. Pour the Cointreau over them. Let the fruits marinate for 15 minutes.
- 2. Whisk the eggs with the sugar in a mixing bowl until the mixture is frothy and pale. Stir in the mango puree and the marinated dates. Whip the cream with the cream stabilizer until stiff. Gently fold the whipped cream into the egg mixture to keep it airy. Rinse four small molds with cold water. Fill the molds with the mixture. Place the molds in the freezer and let them freeze for at least 3 hours.
- 3. Take the molds out of the freezer half an hour before serving and place them in the refrigerator. Dip the molds briefly in hot water to release the ice. Turn the parfaits out onto plates. Serve them as desired with some mango puree mixed with Cointreau.
