🍰 Fresh Mango Mousse with Berry Topping

Ingredients
- 150 g strawberries
- 2 tsp sugar
- 1 sheet white gelatin
- 1 mango
- 5 tsp lime juice
- 100 ml whipping cream (35% fat)
- lemon balm (for garnish)
Instructions
- 1. Wash the strawberries thoroughly.
- 2. Dry the berries with a kitchen towel.
- 3. Set aside two whole strawberries for garnish.
- 4. Quarter the remaining strawberries.
- 5. Sprinkle the strawberry pieces with sugar.
- 6. Let the sugared berries sit in a bowl to release their juices.
- 7. Soak the gelatin in cold water.
- 8. Peel the mango.
- 9. Cut the soft flesh away from the hard central pit.
- 10. Dice the mango flesh.
- 11. Puree the mango cubes into a smooth pulp.
- 12. Press the mango puree through a fine sieve.
- 13. Squeeze the soaked gelatin well to remove excess water.
- 14. Dissolve the gelatin in a small pot with a little water.
- 15. Set aside one tablespoon of the mango puree.
- 16. Stir the gelatin solution into the reserved tablespoon of mango puree.
- 17. Fold this mixture into the remaining mango puree.
- 18. Season the mixture with lime juice.
- 19. Whip the cream stiffly using a hand mixer.
- 20. Gently fold the whipped cream into the mango mixture.
- 21. Chill the mousse in the refrigerator for at least one hour.
- 22. Garnish the finished mousse with the reserved strawberries.
- 23. Decorate the dish with fresh lemon balm.
- 24. Serve the mango mousse cold.
