  1. 1. Peel the mangoes and carefully cut the flesh away from the pit.
  2. 2. Cut the fruit flesh into small cubes.
  3. 3. Place the mango pieces into a bowl.
  4. 4. Pour the lemon juice over the mango pieces.
  5. 5. Mix the mango with the jam sugar.
  6. 6. Mash the mixture into a fine puree using a potato masher or a fork.
  7. 7. Cover the bowl and let the mixture sit in the refrigerator overnight.
  8. 8. Peel the ginger.
  9. 9. Grate the ginger finely.
  10. 10. Add the grated ginger to the mango mixture.
  11. 11. Place the mixture on the stove and heat it up.
  12. 12. Let the mixture bubble vigorously for 4 minutes while stirring constantly.
  13. 13. Stir in the coconut flakes into the hot jam as desired.
  14. 14. Fill the hot jam immediately into the prepared, clean jars.
  15. 15. Seal the jars tightly.
