🍽️ Fresh Mango Coconut Jam

Ingredients
- 4 ripe mangoes
- juice of one lemon
- 500 g jam sugar (2:1)
- 15 g fresh ginger
- 2 tbsp coconut flakes (to taste)
Instructions
- 1. Peel the mangoes and carefully cut the flesh away from the pit.
- 2. Cut the fruit flesh into small cubes.
- 3. Place the mango pieces into a bowl.
- 4. Pour the lemon juice over the mango pieces.
- 5. Mix the mango with the jam sugar.
- 6. Mash the mixture into a fine puree using a potato masher or a fork.
- 7. Cover the bowl and let the mixture sit in the refrigerator overnight.
- 8. Peel the ginger.
- 9. Grate the ginger finely.
- 10. Add the grated ginger to the mango mixture.
- 11. Place the mixture on the stove and heat it up.
- 12. Let the mixture bubble vigorously for 4 minutes while stirring constantly.
- 13. Stir in the coconut flakes into the hot jam as desired.
- 14. Fill the hot jam immediately into the prepared, clean jars.
- 15. Seal the jars tightly.
