🍽️ Chard Rolls with Goat Cheese and Sage Filling

Ingredients
- 8 large Swiss chard leaves
- salt
- 1 bunch arugula
- 4 sprigs sage (with flowers)
- 200 g goat cream cheese
- 50 g curd cheese
- 2 tbsp whipping cream
- pepper (from the mill)
- 3 tbsp pine nuts
- 1 tsp liquid honey
Instructions
- 1. Wash the chard leaves thoroughly.
- 2. Remove the tough stems from the leaves.
- 3. Bring a pot of salted water to a boil.
- 4. Blanch the chard leaves in the boiling water for a short time until they are soft.
- 5. Remove the leaves immediately and plunge them into cold water to stop the cooking process.
- 6. Gently pat the leaves dry with a kitchen towel.
- 7. Lay the leaves flat side by side on a work surface.
- 8. Slice the thick central veins of the leaves flat so they roll up more easily.
- 9. Wash the arugula and the sage leaves.
- 10. Shake the greens dry.
- 11. Pluck the edible sage flowers from the stems.
- 12. Finely chop the sage leaves.
- 13. Cut the arugula into thin strips.
- 14. Mix the goat cream cheese with the quark and cream in a bowl.
- 15. Season the cheese mixture with salt and pepper.
- 16. Fold in the cut arugula strips and the chopped sage leaves into the cheese mixture.
- 17. Spread the cheese filling evenly over the chard leaves.
- 18. Sprinkle some sage flowers over the filled leaves.
- 19. Roll the leaves up tightly into rolls.
- 20. Place the rolls in the refrigerator for about 30 minutes.
- 21. Heat a pan without any fat.
- 22. Toast the pine nuts in the hot pan until they are fragrant.
- 23. Stir in the honey and let the pine nuts caramelize slightly.
- 24. Place the candied pine nuts on a baking sheet lined with baking paper.
- 25. Let the pine nuts cool down completely.
- 26. Cut the cold chard rolls in half.
- 27. Arrange the halves on the plates.
- 28. Sprinkle the dish with the cooled candied pine nuts.
- 29. Garnish with the remaining fresh sage flowers.
- 30. Serve the rolls immediately.
