  4. 4. Blanch the chard leaves in the boiling water for a short time until they are soft.
  5. 5. Remove the leaves immediately and plunge them into cold water to stop the cooking process.
  6. 6. Gently pat the leaves dry with a kitchen towel.
  7. 7. Lay the leaves flat side by side on a work surface.
  8. 8. Slice the thick central veins of the leaves flat so they roll up more easily.
  9. 9. Wash the arugula and the sage leaves.
  10. 10. Shake the greens dry.
  11. 11. Pluck the edible sage flowers from the stems.
  12. 12. Finely chop the sage leaves.
  13. 13. Cut the arugula into thin strips.
  14. 14. Mix the goat cream cheese with the quark and cream in a bowl.
  15. 15. Season the cheese mixture with salt and pepper.
  16. 16. Fold in the cut arugula strips and the chopped sage leaves into the cheese mixture.
  17. 17. Spread the cheese filling evenly over the chard leaves.
  18. 18. Sprinkle some sage flowers over the filled leaves.
