  1. 1. Soak the mushrooms according to the package instructions.
  2. 2. Then pat the mushrooms dry with a kitchen towel.
  3. 3. Peel the avocado and cut it in half.
  4. 4. Remove the pit of the avocado.
  5. 5. Mash the avocado flesh finely with a fork.
  6. 6. Stir the sour cream into the avocado.
  7. 7. Season the mixture with lemon juice, salt, and chili.
  8. 8. Wash the chard and clean it.
  9. 9. Remove the tough leaf ribs from the chard.
  10. 10. Cut the chard leaves into pieces, depending on how large you want your rolls to be.
  11. 11. Peel the red and yellow beets.
  12. 12. Finely shred the beets into strips.
  13. 13. Rinse the cress and let it drain well.
  14. 14. Place the beets, cress, and mushrooms in the center of the chard leaves.
  15. 15. Roll the leaves into rolls of your desired size.
  16. 16. Serve the wraps with the avocado cream.
