🍲 Creamy Chard and Potato Soup

Ingredients
- 1 onion
- 1 garlic clove
- 500 g firm-cooking potatoes
- 1 red chili pepper
- 250 g chard
- 1 tsp freshly grated ginger
- 2 tbsp olive oil
- 800 ml vegetable broth
- salt
- nutmeg
Instructions
- 1. Heat a pot on the stove.
- 2. Peel the onion, garlic, and potatoes.
- 3. Cut the potatoes into small cubes.
- 4. Dice the onion and garlic very finely.
- 5. Wash the chili pepper.
- 6. Halve the chili pepper and remove the seeds.
- 7. Finely chop the chili pepper.
- 8. Wash the chard.
- 9. Remove the tough stems from the chard.
- 10. Cut the chard leaves into thin strips.
- 11. Add some oil to the hot pot.
- 12. Sauté the chili pepper, garlic, and ginger briefly in the hot oil.
- 13. Add the chard to the spices.
- 14. Stir the chard until it has wilted.
- 15. Pour the vegetable broth into the pot.
- 16. Add the potato cubes to the soup.
- 17. Season the soup with salt to taste.
- 18. Simmer the soup on low heat for about 10 minutes.
- 19. Season the soup with salt and nutmeg.
- 20. Fill the soup into small bowls.
- 21. Serve the soup hot.
