  1. 1. Wash the chard thoroughly and remove the tough stems.
  2. 2. Chop the chard leaves into small pieces.
  3. 3. Boil the chard in salted water for about 4 minutes.
  4. 4. Drain the chard and rinse it with cold water to stop the cooking process.
  5. 5. Squeeze the chard very well to remove excess water.
  6. 6. Rinse the chickpeas and let them drain.
  7. 7. Peel one onion and chop it finely.
  8. 8. Peel the garlic clove and chop it finely.
  9. 9. Wash the fresh herbs and shake them dry.
  10. 10. Pick the leaves off the stems.
  11. 11. Set aside a handful of herbs for garnish.
  12. 12. Place the chard, chickpeas, onion, garlic, and most of the herbs into a large bowl.
  13. 13. Season the mixture with salt, pepper, chili flakes, one teaspoon of cumin, and coriander.
  14. 14. Mash the ingredients roughly using a potato masher or a fork.
  15. 15. Stir flour and baking powder into the mixture.
  16. 16. Work everything into a moldable dough.
  17. 17. Add a little more flour or water if needed to achieve the right consistency.
  18. 18. Form 12 equal-sized balls from the mixture.
  19. 19. Let the falafel balls rest for 5 to 10 minutes.
  20. 20. Peel the remaining onion and the sweet potato.
  21. 21. Cut the onion and sweet potato into coarse cubes.
  22. 22. Boil the cubes in salted water for 15 to 20 minutes until soft.
  23. 23. Drain the vegetables.
  24. 24. Add butter and roughly mash the vegetables.
  25. 25. Season the mash with salt, pepper, and the remaining cumin.
  26. 26. Heat oil in a large frying pan.
  27. 27. Fry the falafel over medium heat for 10 minutes until golden brown.
  28. 28. Place sesame seeds on a plate.
  29. 29. Roll the cooked falafel in the sesame seeds.
  30. 30. Place the sweet potato mash on the plates.
  31. 31. Place the falafel next to the mash.
  32. 32. Sprinkle the dish with black cumin, chili flakes, and the remaining herbs.
  33. 33. Drizzle everything with honey and tahini.
