🍽️ Crispy Chard Falafel with Sweet Potato Mash

Ingredients
- 300 g chard
- salt
- 300 g chickpeas (can; drained weight)
- 2 onions
- 4 garlic cloves
- 3 handfuls herbs (15 g; dill, parsley, cilantro)
- pepper
- chili flakes
- 1.5 tsp ground cumin
- 2 tsp ground coriander
- 280 g whole wheat flour
- 1 tsp baking powder
- 800 g sweet potatoes (2–3 pieces)
- 1 tbsp butter (15 g each)
- 4 tbsp rapeseed oil
- 6 tbsp sesame seeds (15 g each)
- 1 tsp black cumin seeds
- 1 tbsp honey
- 2 tbsp tahini (15 g each; sesame paste)
Instructions
- 1. Wash the chard thoroughly and remove the tough stems.
- 2. Chop the chard leaves into small pieces.
- 3. Boil the chard in salted water for about 4 minutes.
- 4. Drain the chard and rinse it with cold water to stop the cooking process.
- 5. Squeeze the chard very well to remove excess water.
- 6. Rinse the chickpeas and let them drain.
- 7. Peel one onion and chop it finely.
- 8. Peel the garlic clove and chop it finely.
- 9. Wash the fresh herbs and shake them dry.
- 10. Pick the leaves off the stems.
- 11. Set aside a handful of herbs for garnish.
- 12. Place the chard, chickpeas, onion, garlic, and most of the herbs into a large bowl.
- 13. Season the mixture with salt, pepper, chili flakes, one teaspoon of cumin, and coriander.
- 14. Mash the ingredients roughly using a potato masher or a fork.
- 15. Stir flour and baking powder into the mixture.
- 16. Work everything into a moldable dough.
- 17. Add a little more flour or water if needed to achieve the right consistency.
- 18. Form 12 equal-sized balls from the mixture.
- 19. Let the falafel balls rest for 5 to 10 minutes.
- 20. Peel the remaining onion and the sweet potato.
- 21. Cut the onion and sweet potato into coarse cubes.
- 22. Boil the cubes in salted water for 15 to 20 minutes until soft.
- 23. Drain the vegetables.
- 24. Add butter and roughly mash the vegetables.
- 25. Season the mash with salt, pepper, and the remaining cumin.
- 26. Heat oil in a large frying pan.
- 27. Fry the falafel over medium heat for 10 minutes until golden brown.
- 28. Place sesame seeds on a plate.
- 29. Roll the cooked falafel in the sesame seeds.
- 30. Place the sweet potato mash on the plates.
- 31. Place the falafel next to the mash.
- 32. Sprinkle the dish with black cumin, chili flakes, and the remaining herbs.
- 33. Drizzle everything with honey and tahini.
