🍽️ Fresh Mango Quark Cream with Lime

Ingredients
- 500 g ripe mango (1 ripe mango)
- 1 lime
- 1 tbsp brown cane sugar
- 200 g low-fat quark
- 8 sheets white gelatin
- 50 g whipping cream
- lime slice (for garnish)
Instructions
- 1. Peel the mango thinly and slice the flesh into thin strips away from the pit.
- 2. Wash the lime with hot water, peel off a few thin strips of zest and set them aside for garnish.
- 3. Grate the rest of the lime zest and squeeze out the juice.
- 4. Puree the mango flesh, lime juice, grated zest, and sugar in a blender.
- 5. Stir the quark into the mango mixture.
- 6. Soak the gelatin in cold water for about 10 minutes.
- 7. Drain the gelatin briefly and dissolve it in a small saucepan while stirring.
- 8. Take some of the warm mango cream and stir it into the dissolved gelatin to equalize the temperature.
- 9. Stir the gelatin mixture gradually into the remaining mango quark.
- 10. Place the cream in the refrigerator for about 30 minutes until it begins to thicken.
- 11. Whip the cream until stiff.
- 12. Gently fold the whipped cream into the thickening cream.
- 13. Divide the cream among dessert bowls.
- 14. Chill the cream for about 3 hours.
- 15. Garnish the finished cream with lime slices and lime zest strips.
