  1. 1. Peel the mango thinly and slice the flesh into thin strips away from the pit.
  2. 2. Wash the lime with hot water, peel off a few thin strips of zest and set them aside for garnish.
  3. 3. Grate the rest of the lime zest and squeeze out the juice.
  4. 4. Puree the mango flesh, lime juice, grated zest, and sugar in a blender.
  5. 5. Stir the quark into the mango mixture.
  6. 6. Soak the gelatin in cold water for about 10 minutes.
  7. 7. Drain the gelatin briefly and dissolve it in a small saucepan while stirring.
  8. 8. Take some of the warm mango cream and stir it into the dissolved gelatin to equalize the temperature.
  9. 9. Stir the gelatin mixture gradually into the remaining mango quark.
  10. 10. Place the cream in the refrigerator for about 30 minutes until it begins to thicken.
  11. 11. Whip the cream until stiff.
  12. 12. Gently fold the whipped cream into the thickening cream.
  13. 13. Divide the cream among dessert bowls.
  14. 14. Chill the cream for about 3 hours.
  15. 15. Garnish the finished cream with lime slices and lime zest strips.
