🍽️ Turmeric Mango Mousse

Ingredients
- 4 sheets gelatin
- 1 mango
- 1 tsp turmeric (ground)
- 60 g brown sugar
- 2 tbsp lime juice
- 2 eggs
- 100 g yogurt
- 100 ml whipping cream

Instructions
- 1. Soak the gelatin in a bowl of cold water.
- 2. Peel the mango and cut the flesh away from the pit.
- 3. Cut the mango flesh into small pieces.
- 4. Add the mango pieces, turmeric, one tablespoon of sugar, and lime juice to a blender.
- 5. Blend the mixture until smooth.
- 6. Remove two tablespoons of the mango cream and set it aside in the cold for later garnishing.
- 7. Whisk the eggs with the remaining sugar over a bowl of hot water until the mixture is thick and creamy.
- 8. Squeeze the soaked gelatin sheet well to remove excess water.
- 9. Add the squeezed gelatin to the warm egg mixture and stir until it has completely dissolved.
- 10. Let the gelatin-egg mixture cool down briefly, then whisk it until cold.
- 11. Stir the remaining mango cream and yogurt into the cooled gelatin mixture.
- 12. Whip the cream until stiff.
- 13. Gently fold the whipped cream into the mango-yogurt mixture.
- 14. Spray four pudding molds with non-stick cooking spray or line them with cling film.
- 15. Fill the mousse into the prepared molds.
- 16. Unmold the mousse for serving.
- 17. Sprinkle the mousse with turmeric.
- 18. Drizzle the reserved mango puree around the mousse.
- 19. Serve the mousse with meringue on the side if desired.
