  1. 1. Dice the pineapple flesh into small cubes.
  2. 2. Wash the lime and lemon under hot water and pat them dry.
  3. 3. Grate the zest from both fruits finely.
  4. 4. Squeeze the juice from the lime and the lemon.
  5. 5. Peel the ginger and chop it very finely.
  6. 6. Heat the citrus juices, the zest, the honey, and the rum in a pot.
  7. 7. Add the pineapple cubes and remove the pot from the heat immediately.
  8. 8. Let the mixture steep briefly so the flavors can meld.
  9. 9. Wash the mangoes and cut them lengthwise close to the pit into two halves.
  10. 10. Lightly brush the cut surfaces of the mango halves with oil.
  11. 11. Place the mango halves on the hot grill.
  12. 12. Grill them all around for about 10 minutes.
  13. 13. Arrange the grilled mangoes on the plates.
  14. 14. Drizzle the prepared pineapple sauce over the mangoes and serve.
