🍽️ Icy Mango-Yogurt with Fresh Raspberry Sugar Glaze

Ingredients
- 2 ripe mangoes (approx. 600 g)
- 100 g sugar
- 2 tbsp lime juice
- 2 tbsp orange liqueur
- 300 g yogurt
- 300 g raspberries
- 1 tbsp powdered sugar
- 1 orange (juiced)
- mint (for garnish)
Instructions
- 1. Peel the mangoes.
- 2. Carefully cut the soft fruit flesh away from the large seed.
- 3. Put the mango flesh into a tall mixing cup.
- 4. Add the sugar.
- 5. Pour in the lime juice.
- 6. Pour in the orange liqueur.
- 7. Puree the mixture with a hand blender until it is very fine and smooth.
- 8. Pour the fruit mixture through a fine sieve to remove any coarse fibers.
- 9. Set the yogurt aside.
- 10. Use the whisk attachments of your electric hand mixer.
- 11. Whip the yogurt with the fruit liquid until it becomes airy and foamy.
- 12. Fill the creamy mixture into a shallow metal bowl.
- 13. Cover the bowl.
- 14. Place the bowl in the freezer compartment.
- 15. Wait until the mixture starts to freeze slightly at the edges.
- 16. Take a fork.
- 17. Stir the mixture vigorously to break up ice crystals.
- 18. Wait 20 minutes.
- 19. Repeat the vigorous stirring with the fork.
- 20. Do this every 20 minutes a total of three to four times.
- 21. Alternatively, you can finish freezing the mixture in an ice cream maker.
- 22. Wash the raspberries under running water.
- 23. Remove all green stems and leaves.
- 24. Sort the berries to remove any rotten or unripe ones.
- 25. Let the raspberries drain well.
- 26. Put the raspberries into the mixing cup.
- 27. Pour in the orange juice.
- 28. Sift the powdered sugar over the berries.
- 29. Puree everything into a smooth sauce.
- 30. Strain the sauce through a fine sieve to remove seeds and fibers.
- 31. Take the mango cream out of the freezer shortly before serving.
- 32. Let the cream thaw briefly so it is easy to portion.
- 33. Use an ice cream scoop.
- 34. Form round balls from the mango cream.
- 35. Place the ice balls into small ice cream cups or bowls.
- 36. Drizzle the balls generously with the raspberry sauce.
- 37. Garnish the dessert with fresh mint leaves.
