🍽️ Fresh Matjes and Mango Salad

Ingredients
- 4 Matjes
- 1 Mango
- 2 Spring onions
- 1 heaped TSP small capers
- 1 TSP red wine vinegar
- 2 TSP olive oil
- Cayenne pepper
Instructions
- 1. Rinse the matjes fillets under cold water and pat them dry with a kitchen towel.
- 2. Cut the matjes fillets into very small, fine cubes.
- 3. Thoroughly wash the spring onions.
- 4. Finely chop most of the spring onions.
- 5. Slice the remaining spring onions into fine rings.
- 6. Mix the chopped spring onions with the matjes cubes in a bowl.
- 7. Finely chop the capers.
- 8. Fold the chopped capers into the matjes mixture.
- 9. Season the mixture with vinegar, oil, and cayenne pepper.
- 10. Let the matjes mixture marinate for about 15 minutes.
- 11. Peel the mango and cut the flesh away from the pit.
- 12. Cut half of the mango flesh into cubes.
- 13. Cut the other half of the mango flesh into slices.
- 14. Stir the mango cubes into the marinated matjes mixture.
- 15. Place the mango slices on the plates.
- 16. Place the matjes-mango mixture on the plates.
- 17. Garnish the salad with the sliced spring onion rings.
- 18. Serve the salad immediately.
