🍳 Crunchy Mango-Almond Bars

Ingredients
- 100 g dried mango
- 50 g chopped almond kernels
- 1 tbsp sesame seeds
- 50 g ground almond kernels
- 100 g rolled oats
- 30 g butter (2 tbsp)
- 50 g raw cane sugar
- 100 g liquid honey
- 1 tsp orange juice
Instructions
- 1. Dice the mango flesh into very small cubes.
- 2. Place the chopped almonds and sesame seeds in a non-stick pan without oil.
- 3. Roast the nuts and seeds over medium heat until they are light brown and fragrant.
- 4. Remove the roasted almonds and sesame seeds from the pan and add them to a large mixing bowl.
- 5. Add the ground almonds and oat flakes to the bowl.
- 6. Add the finely diced mango to the bowl.
- 7. Mix all the dry and fresh ingredients in the bowl thoroughly.
- 8. Melt the butter in a clean pan on the stove.
- 9. Add the sugar, honey, and orange juice to the melting butter.
- 10. Stir the mixture constantly until it comes to a boil.
- 11. Let the sweet sauce simmer for two minutes over medium heat.
- 12. The sauce should now look liquid and golden yellow.
- 13. Remove the pan from the heat.
- 14. Pour the hot sauce over the mango-almond mixture in the bowl.
- 15. Stir everything vigorously until the mixture is uniform.
- 16. Line a baking tray with baking paper.
- 17. Place the mixture onto the baking paper.
- 18. Cover the mixture with a second layer of cling film.
- 19. Press the mixture flat and roll it out to a thickness of about 1.5 centimeters.
- 20. Carefully remove the top layer of film.
- 21. Let the mango-almond slab cool down for about 20 minutes.
- 22. Cut the cooled slab into about 30 small squares.
- 23. Place the bars on a clean cutting board.
- 24. Let the bars dry overnight to firm up.
