  4. 4. Peel the limes thoroughly and fillet them, catching the juice in the process.
  5. 5. Mix the mango cubes, mango pulp, and lime fillets together.
  6. 6. Weigh the mango mixture.
  7. 7. Add exactly as much sugar as the mango mixture weighs.
  8. 8. Stir the sugar well into the mango mixture.
  9. 9. Add the kaffir lime leaves.
  10. 10. Let the mixture steep for about 2 hours.
  11. 11. Bring the jam to a boil while stirring constantly.
  12. 12. Let the jam boil vigorously for about 4 minutes.
  13. 13. Perform a gel test to check if the jam has set.
  14. 14. Fill the hot jam into prepared jars.
  15. 15. Seal the jars tightly.
  16. 16. Let the jam cool down in the jars.
