Ingredients
- 1.2 kg ripe mango
- 8 limes
- 1 kg jam sugar (1:1)
- 6 kaffir lime leaves
Instructions
- 1. Peel the mangoes and cut the flesh away from the pit.
- 2. Dice half of the mango coarsely and the other half finely.
- 3. Puree the coarse mango pieces into a smooth pulp.
- 4. Peel the limes thoroughly and fillet them, catching the juice in the process.
- 5. Mix the mango cubes, mango pulp, and lime fillets together.
- 6. Weigh the mango mixture.
- 7. Add exactly as much sugar as the mango mixture weighs.
- 8. Stir the sugar well into the mango mixture.
- 9. Add the kaffir lime leaves.
- 10. Let the mixture steep for about 2 hours.
- 11. Bring the jam to a boil while stirring constantly.
- 12. Let the jam boil vigorously for about 4 minutes.
- 13. Perform a gel test to check if the jam has set.
- 14. Fill the hot jam into prepared jars.
- 15. Seal the jars tightly.
- 16. Let the jam cool down in the jars.
