🍽️ Refreshing Mango-Lime Cream

Ingredients
- 1 large mango (ripe, preferably Thai mango)
- 2 tbsp cornstarch
- 200 ml water
- 150 g yogurt
- 80 g powdered sugar
- 3 limes
- 200 g whipping cream
Instructions
- 1. Wash the limes thoroughly.
- 2. Finely grate the lime zest.
- 3. Squeeze the limes.
- 4. Measure exactly 100 milliliters of lime juice.
- 5. Mix the cornstarch with a small splash of cold water until smooth.
- 6. Add the remaining water, the lime juice, and the powdered sugar to a pot.
- 7. Bring the mixture in the pot to a boil.
- 8. Pour the mixed cornstarch into the boiling liquid while stirring constantly.
- 9. Let the mixture boil once briefly.
- 10. Remove the pot from the heat.
- 11. Let the cream cool down completely while stirring occasionally.
- 12. Peel the mango.
- 13. Slice thin pieces from the flesh.
- 14. Cut some of the slices into thin strips.
- 15. Dice the remaining part of the mango into small cubes.
- 16. Distribute the mango cubes evenly onto 12 small bowls.
- 17. Stir the yogurt into the cooled lime cream.
- 18. Whip the cream until stiff.
- 19. Gently fold the whipped cream into the yogurt cream.
- 20. Finally, taste the cream to adjust the flavor.
- 21. Pour the finished cream over the mango cubes in the bowls.
- 22. Garnish the desserts with the mango strips.
- 23. Sprinkle the lime zest over the top.
- 24. Place the bowls in the refrigerator for at least 3 hours.
