🍽️ Zesty Mango-Ginger Jam

Ingredients
- 4 ripe mangoes (for 1 kg fruit flesh)
- 2 cm fresh ginger
- 1 kg jam sugar (1:1)
- 2 sprigs mint
Instructions
- 1. Peel the mangoes and carefully cut the flesh away from the pit.
- 2. Dice the mango flesh into small cubes.
- 3. Peel the ginger and cut it into thin strips.
- 4. Place the mango cubes, sugar, and ginger into a bowl.
- 5. Mix the ingredients well and let the mixture sit for two hours.
- 6. Wash the mint and shake off excess water.
- 7. Pluck the mint leaves from the stems and chop them finely.
- 8. Place the mango-sugar mixture in a pot and bring it to a boil.
- 9. Let the jam bubble vigorously for four minutes.
- 10. Stir the chopped mint into the hot jam.
- 11. Fill the jam into well-rinsed jars.
- 12. Seal the jars tightly with lids.
- 13. Place the sealed jars upside down for ten minutes.
- 14. Turn the jars over and let them cool down completely.
- 15. Store the finished jam in a cool and dark place.
