  1. 1. Peel the mangoes and carefully cut the flesh away from the pit.
  2. 2. Dice the mango flesh into small cubes.
  3. 3. Peel the ginger and cut it into thin strips.
  4. 4. Place the mango cubes, sugar, and ginger into a bowl.
  5. 5. Mix the ingredients well and let the mixture sit for two hours.
  6. 6. Wash the mint and shake off excess water.
  7. 7. Pluck the mint leaves from the stems and chop them finely.
  8. 8. Place the mango-sugar mixture in a pot and bring it to a boil.
  9. 9. Let the jam bubble vigorously for four minutes.
  10. 10. Stir the chopped mint into the hot jam.
  11. 11. Fill the jam into well-rinsed jars.
  12. 12. Seal the jars tightly with lids.
  13. 13. Place the sealed jars upside down for ten minutes.
  14. 14. Turn the jars over and let them cool down completely.
  15. 15. Store the finished jam in a cool and dark place.
