🍰 Fluffy Mango Yeast Cake with Honey Glaze

Ingredients
- 400 g spelt whole wheat flour (and some flour for the work surface)
- 21 g yeast (0.5 cube)
- 50 g coconut blossom sugar
- 150 ml lukewarm milk (3.5 % fat)
- 50 g butter
- 2 eggs
- 0.5 tsp salt
- 3 mangoes
- 2 tbsp liquid honey
Instructions
- 1. Put the flour into a large bowl.
- 2. Press a well into the center of the flour with your thumb.
- 3. Crumble the yeast into the well.
- 4. Sprinkle two tablespoons of coconut blossom sugar over the yeast.
- 5. Stir the milk into the yeast-sugar mixture.
- 6. Distribute the butter around the flour ring surrounding the well.
- 7. Cover the bowl.
- 8. Let the dough rise in a warm, draft-free place for about 30 minutes.
- 9. Wait until the surface of the dough shows cracks.
- 10. Add the eggs, the remaining sugar, and the salt to the pre-dough.
- 11. Knead everything into a smooth and elastic dough.
- 12. If the dough is too dry, add a little flour.
- 13. If the dough is too sticky, add a little milk.
- 14. Cover the bowl again.
- 15. Let the dough rise for another 60 minutes in a warm, draft-free place.
- 16. Wait until the volume of the dough has doubled.
- 17. Knead the dough once more briefly.
- 18. Lightly dust a work surface with flour.
- 19. Roll out the dough on the floured surface.
- 20. Line a baking tray with baking paper.
- 21. Place the dough on the tray.
- 22. Press the dough down evenly.
- 23. Form a border on the dough.
- 24. Peel the mangoes.
- 25. Cut the flesh away from the pit.
- 26. Cut the fruit into thin slices.
- 27. Arrange the mango slices in a fan shape on the dough.
- 28. Preheat the oven to 180 °C.
- 29. Use convection (fan) at 160 °C if your oven has this setting.
- 30. Use gas level 2 to 3 if you have a gas stove.
- 31. Bake the cake for about 45 minutes until golden brown.
- 32. Perform the skewer test to check the baking time.
- 33. Take the cake out of the oven.
- 34. Brush the still hot cake with honey.
