🍽️ Indian Mango Ice Cream (Kulfi)

Ingredients
- 2 ripe mangoes
- 150 g sugar
- 1 untreated lemon (juice)
- 1 pinch cardamom
- 125 ml coconut milk
- 125 ml whipping cream (at least 30% fat content)
- 4 passion fruits
Instructions
- 1. Peel the mangoes.
- 2. Carefully cut the flesh away from the pit.
- 3. Set aside one quarter of the fruit flesh.
- 4. Cut this quarter into thin slices.
- 5. Prepare the slices for decoration.
- 6. Place the remaining mango portion into a blender.
- 7. Add the sugar.
- 8. Add the lemon juice.
- 9. Add the cardamom spice.
- 10. Pour in the coconut milk.
- 11. Add the cream.
- 12. Blend the mixture until smooth.
- 13. Take pre-chilled, sugar-loaf-shaped molds.
- 14. Fill the mango mixture into the molds.
- 15. Place the molds in the freezer.
- 16. Let the ice cream cool for at least 4 hours.
- 17. Cut the passion fruits in half.
- 18. Scoop out the fruit flesh and seeds.
- 19. Dip the filled molds briefly into hot water.
- 20. Invert the ice cream onto plates.
- 21. Pour the passion fruit flesh over the ice cream.
- 22. Garnish the dish with the prepared mango slices.
- 23. Serve the ice cream immediately.
