🍽️ Fruity and Spicy Mango Chutney

Ingredients
- 2 ripe mangoes (each about 400 g)
- 2 oranges
- 4 chili peppers
- 300 g onions
- 750 ml white wine vinegar
- 100 g raisins
- 300 g cane sugar
- 1 tsp salt
Instructions
- 1. Peel the mangoes and cut the flesh away from the pit.
- 2. Dice the mango flesh into pieces about 1 cm in size.
- 3. Peel the oranges thoroughly with a sharp knife, removing the white bitter pith as well.
- 4. Carefully separate the orange segments from the membranes.
- 5. Catch the juice released by the segments in a bowl.
- 6. Squeeze the juice from the remaining orange scraps and add it to the collected juice.
- 7. Wash the chili peppers and cut them lengthwise.
- 8. Remove the seeds and the white inner membrane of the chilis.
- 9. Cut the deseeded chilis into thin strips.
- 10. Peel the onions and dice them finely.
- 11. Place the onion cubes and about 100 ml of vinegar in a saucepan.
- 12. Sauté the onions over low heat until translucent.
- 13. Add the mango cubes, orange segments, and raisins to the onion mixture.
- 14. Sauté the ingredients together for a short time.
- 15. Add the remaining vinegar, the collected orange juice, the sugar, and the salt.
- 16. Add the chili strips to the pan.
- 17. Cover the saucepan and simmer the chutney over medium heat.
- 18. Let the chutney simmer for about 1 hour.
- 19. Check if the mango cubes are soft and falling apart.
- 20. Remove the saucepan from the heat once the mango is soft.
- 21. Let the chutney cool down.
- 22. Store the chutney in the refrigerator.
- 23. The chutney will keep for several weeks.
