🍰 French Almond Tartlets

Ingredients
- 125 g Butter
- 150 g cane sugar
- salt
- 250 g flour (Type 405)
- 4 eggs
- 75 g ground almond kernels
- 4 tbsp apricot jam
Instructions
- 1. Place 75 grams of butter, 100 grams of sugar, and a pinch of salt into a bowl.
- 2. Stir the ingredients until smooth, but do not whip them into a foam.
- 3. Beat the 2 eggs into the butter-sugar mixture.
- 4. Add the flour all at once.
- 5. Knead everything into a smooth dough.
- 6. Wrap the dough in plastic wrap.
- 7. Let the dough rest in the refrigerator for 2 hours.
- 8. Sprinkle some flour on a work surface.
- 9. Roll out the dough to a thickness of 3 to 4 millimeters.
- 10. Cut out 8 circles with a diameter of 10 centimeters.
- 11. Lightly grease 8 tart molds with a diameter of 8 centimeters.
- 12. Place the dough circles into the molds.
- 13. Press the edge of the dough firmly against the mold.
- 14. Let the lined molds rest in the refrigerator for 30 minutes.
- 15. Trim off any excess dough that hangs over the edge.
- 16. Melt the remaining butter.
- 17. Pour the melted butter into a bowl.
- 18. Add the remaining sugar, eggs, and ground almonds.
- 19. Add a pinch of salt.
- 20. Stir the filling until smooth.
- 21. Pour the filling evenly into the tartlets.
- 22. Preheat the oven to 180 degrees Celsius.
- 23. Place the tartlets on the lowest rack.
- 24. Bake the tartlets for approx. 25 minutes.
- 25. Use convection (fan-assisted) if your oven has this function, and set it to 165 degrees Celsius.
- 26. Remove the baked tartlets from the oven.
- 27. Let them cool slightly.
- 28. Carefully release the tartlets from the molds.
- 29. Place the apricot jam in a small saucepan.
- 30. Melt the jam.
- 31. Brush the surface of the tartlets with the melted jam.
- 32. Garnish the tartlets with some fresh fruit or berries.
- 33. Serve the tartlets.
