  1. 1. Place 75 grams of butter, 100 grams of sugar, and a pinch of salt into a bowl.
  2. 2. Stir the ingredients until smooth, but do not whip them into a foam.
  3. 3. Beat the 2 eggs into the butter-sugar mixture.
  4. 4. Add the flour all at once.
  5. 5. Knead everything into a smooth dough.
  6. 6. Wrap the dough in plastic wrap.
  7. 7. Let the dough rest in the refrigerator for 2 hours.
  8. 8. Sprinkle some flour on a work surface.
  9. 9. Roll out the dough to a thickness of 3 to 4 millimeters.
  10. 10. Cut out 8 circles with a diameter of 10 centimeters.
  11. 11. Lightly grease 8 tart molds with a diameter of 8 centimeters.
  12. 12. Place the dough circles into the molds.
  13. 13. Press the edge of the dough firmly against the mold.
  14. 14. Let the lined molds rest in the refrigerator for 30 minutes.
  15. 15. Trim off any excess dough that hangs over the edge.
  16. 16. Melt the remaining butter.
  17. 17. Pour the melted butter into a bowl.
  18. 18. Add the remaining sugar, eggs, and ground almonds.
  19. 19. Add a pinch of salt.
  20. 20. Stir the filling until smooth.
  21. 21. Pour the filling evenly into the tartlets.
  22. 22. Preheat the oven to 180 degrees Celsius.
  23. 23. Place the tartlets on the lowest rack.
  24. 24. Bake the tartlets for approx. 25 minutes.
  25. 25. Use convection (fan-assisted) if your oven has this function, and set it to 165 degrees Celsius.
  26. 26. Remove the baked tartlets from the oven.
  27. 27. Let them cool slightly.
  28. 28. Carefully release the tartlets from the molds.
  29. 29. Place the apricot jam in a small saucepan.
  30. 30. Melt the jam.
  31. 31. Brush the surface of the tartlets with the melted jam.
  32. 32. Garnish the tartlets with some fresh fruit or berries.
  33. 33. Serve the tartlets.
