🍰 Almond Stollen Without Raisins

Ingredients
- 1 kg flour
- 2 cubes yeast (fresh)
- 0.25 l milk
- 130 g sugar
- 20 g vanilla sugar
- 1 pinch salt
- 2 tsp lemon zest
- 1 tiny pinch nutmeg flower
- 1 pinch clove
- 1 pinch cinnamon
- 400 g margarine (room temperature)
- 200 g almond kernels
- 2 tsp bitter almond flavoring
- 100 g butter (melted)
- powdered sugar
Instructions
- 1. Sift the flour into a large bowl.
- 2. Make a well in the center of the flour.
- 3. Crumble the yeast into the well.
- 4. Add the vanilla sugar.
- 5. Stir in 3 to 4 tablespoons of milk until you have a smooth paste.
- 6. Let this starter mixture rest for 15 minutes.
- 7. Now add all the remaining ingredients to the dough.
- 8. Knead everything together into a smooth dough.
- 9. Let the dough rise in a warm place for about 60 minutes.
- 10. Wait until the volume of the dough has doubled.
- 11. Sprinkle some flour on your work surface.
- 12. Knead the dough there once more briefly.
- 13. Divide the dough into two equal parts.
- 14. Shape each part into a stollen.
- 15. Place the stollen on a baking sheet lined with baking paper.
- 16. Let the stollen rise again for 20 to 25 minutes.
- 17. Preheat the oven to 180 degrees Celsius.
- 18. Bake the stollen in the oven for about 1 hour.
- 19. Take the stollen out of the oven.
- 20. Let the stollen cool down completely.
- 21. Brush the stollen generously with melted butter.
- 22. Dust the stollen heavily with powdered sugar.
