🍽️ Crunchy Almond & Cherry Cookies

Ingredients
- 80 g candied cherries
- 100 g cold butter
- 80 g cane sugar
- 1 pinch salt
- 1 egg
- 225 g flour
- 1 tsp baking powder
- 0.25 tsp cinnamon and clove powder (each)
- 0.25 tsp ginger powder
- 80 g chopped almond kernels
- 1 egg yolk
- 25 candied cherries
- 40 g sliced almond kernels
Instructions
- 1. Finely chop the cherries.
- 2. In a bowl, mix the chopped cherries with the butter, brown sugar, salt, egg, flour, baking powder, spices, and almonds.
- 3. Knead the ingredients into a uniform dough.
- 4. Shape the dough into a log with a diameter of about 4 centimeters.
- 5. Wrap the dough log tightly in plastic wrap.
- 6. Place the log in the refrigerator for 1 hour.
- 7. Slice the chilled dough log into rounds about 5 millimeters thick.
- 8. Place the cookies on a baking sheet lined with baking paper.
- 9. Whisk the egg yolk in a small bowl.
- 10. Brush the cookies evenly with the whisked egg yolk.
- 11. Halve the candied cherries.
- 12. Place one cherry half and some sliced almonds on each cookie.
- 13. Preheat the oven to 180 degrees (conventional or fan-assisted, depending on your appliance, middle rack).
- 14. Bake the cookies for about 12 minutes.
