🍽️ Crunchy Almond Cookies

Ingredients
- 125 g flour
- 125 g peeled, ground almond kernels
- 1 pinch salt
- 90 g powdered sugar
- 125 g cold butter (in pieces)
- egg yolk
- 1 egg yolk
- 100 g almond slivers
- 3 tbsp fine sugar (for sprinkling)
Instructions
- 1. Process all ingredients into a shortcrust pastry.
- 2. Shape the dough into a ball.
- 3. Wrap the dough ball in cling film.
- 4. Place the foil-wrapped dough in the refrigerator for one hour.
- 5. Lightly dust a work surface with flour.
- 6. Roll out the dough on the floured surface to a thickness of three millimeters.
- 7. Cut out triangles from the dough.
- 8. Place the triangles on a baking sheet lined with baking paper.
- 9. Whisk one egg yolk with two tablespoons of water.
- 10. Brush the cookies with the egg yolk and water mixture.
- 11. Sprinkle the cookies with almond slivers.
- 12. Preheat the oven to 180 degrees.
- 13. Bake the cookies in the preheated oven on the middle rack.
- 14. Bake them for 10 to 15 minutes.
- 15. Sprinkle the finished cookies with sugar.
- 16. Let the cookies cool down completely.
