🍰 Fluffy Almond Muffins with Lemon Glaze

Ingredients
- 200 g spelt flour
- 50 g ground almonds
- 2 tsp baking powder
- 3 eggs
- 100 g whole cane sugar
- 2 tbsp vanilla sugar
- 5 ml vanilla
- 75 ml vegetable oil
- 300 g sour cream
- 125 g powdered sugar (from cane sugar)
- 2 tbsp lemon juice
- colorful sugar sprinkles
Instructions
- 1. Preheat the oven to 180 degrees Celsius (conventional heat). If using fan-assisted heat, set it to 160 degrees. For gas ovens, use setting 2 to 3. Line a muffin tin with paper liners.
- 2. Mix spelt flour, ground almonds, and baking powder in one bowl. Lightly whisk the eggs in a second bowl.
- 3. Add sugar, vanilla sugar, vanilla, oil, and sour cream to the egg mixture. Stir everything well.
- 4. Add the flour mixture to the egg mixture. Stir only until the dry ingredients are moist. Do not overmix.
- 5. Fill the batter into the liners. Bake the muffins in the preheated oven for 25 to 30 minutes.
- 6. Remove the muffins from the oven. Let them cool in the tin for a few minutes. Then remove them from the tin and let them cool completely.
- 7. Mix powdered sugar and lemon juice to make a thick glaze. Spread the glaze over the cooled muffins.
- 8. Sprinkle sugar sprinkles over the muffins. Let the glaze dry before eating.
