🍽️ Pistachio Barfi Made from Almond Milk

Ingredients
- 100 g ground, peeled almond kernels
- 700 ml sweetened condensed milk
- 125 g butter
- 2 tbsp honey
- 150 g whole, peeled pistachios
Instructions
- 1. Mix the almonds with the condensed milk in a bowl.
- 2. Let the mixture soak overnight.
- 3. Strain the milk through a sieve the next day.
- 4. Squeeze the almonds well in the sieve to remove the remaining milk.
- 5. Use the squeezed almonds for another dish.
- 6. Warm the butter in a pot.
- 7. Add the honey and the almond milk to the butter.
- 8. Stir the mixture until it boils.
- 9. Let the mixture simmer for about 25 minutes.
- 10. Wait until the mixture caramelizes, becoming golden brown and thick.
- 11. Fold the pistachios into the caramelized mixture.
- 12. Line a baking sheet with baking paper (approx. 20x20 cm).
- 13. Pour the mixture onto the prepared tray.
- 14. Smooth the surface.
- 15. Let the confection cool completely.
- 16. Cut the cooled confection into pieces.
- 17. Serve the pieces.
