  1. 1. Preheat the oven to 180 degrees.
  2. 2. Separate the eggs by separating the yolks from the whites.
  3. 3. Grind the almonds finely.
  4. 4. Stir the powdered sugar with the egg yolks until smooth.
  5. 5. Add the ground almonds, the lemon zest, the cinnamon, and the vanilla sugar.
  6. 6. Mix all ingredients well together.
  7. 7. Beat the egg whites until very stiff.
  8. 8. Gently fold the beaten egg whites into the almond-yolk mixture.
  9. 9. Grease a 26 cm springform pan.
  10. 10. Dust the pan with breadcrumbs or semolina.
  11. 11. Pour the batter into the prepared pan.
  12. 12. Bake the cake for about 50 minutes.
  13. 13. Dust the cooled cake with powdered sugar before serving.
