🍰 Aromatic Almond Cake

Ingredients
- 250 g peeled almond kernels
- 8 eggs
- 250 g powdered sugar
- untreated lemon zest
- 1 pinch cinnamon
- 1 packet vanilla sugar
- Breadcrumbs (or semolina for the pan)

Instructions
- 1. Preheat the oven to 180 degrees.
- 2. Separate the eggs by separating the yolks from the whites.
- 3. Grind the almonds finely.
- 4. Stir the powdered sugar with the egg yolks until smooth.
- 5. Add the ground almonds, the lemon zest, the cinnamon, and the vanilla sugar.
- 6. Mix all ingredients well together.
- 7. Beat the egg whites until very stiff.
- 8. Gently fold the beaten egg whites into the almond-yolk mixture.
- 9. Grease a 26 cm springform pan.
- 10. Dust the pan with breadcrumbs or semolina.
- 11. Pour the batter into the prepared pan.
- 12. Bake the cake for about 50 minutes.
- 13. Dust the cooled cake with powdered sugar before serving.
