🍰 Classic Almond Cake

Ingredients
- 300 g flour
- 30 g yeast
- 60 g sugar
- 100 ml milk
- 1 egg
- 80 g butter
- 1 tsp grated lemon zest
- 1 pinch salt
- flour (for the work surface)
- 300 g sugar
- 400 ml whipping cream
- 50 g glazed cherries
- 5 eggs
- 1 kg quark
- 500 g mascarpone
- 2 packets vanilla pudding powder
- 250 g sugar
Instructions
- 1. Put the flour for the dough into a large bowl.
- 2. Sift the flour through a sieve into the bowl.
- 3. Make a well in the center of the flour.
- 4. Crumble the yeast into the well.
- 5. Add 1 tablespoon of sugar.
- 6. Pour in 3 tablespoons of lukewarm milk.
- 7. Gently mix the ingredients in the well.
- 8. Cover the bowl.
- 9. Let the dough rise for about 30 minutes.
- 10. Now add the remaining ingredients for the dough.
- 11. Knead everything into a smooth dough.
- 12. Let the dough rise for another 30 minutes.
- 13. Put sugar and cream for the filling into a pot.
- 14. Simmer the mixture over low heat for about 10 minutes.
- 15. Stir the mixture occasionally.
- 16. Remove the pot from the heat.
- 17. Stir in the chopped cherries.
- 18. Put all ingredients for the quark mixture into a bowl.
- 19. Stir the ingredients until smooth.
- 20. Dust a work surface with flour.
- 21. Roll out the dough on the floured surface.
- 22. Line a baking sheet with baking paper.
- 23. Place the dough on the prepared tray.
- 24. Form a border from the dough.
- 25. Spread the quark mixture over the dough.
- 26. Add the almond mixture on top.
- 27. Preheat the oven to 180°C (convection).
- 28. Bake the cake for about 60 minutes.
