🍰 Christmas Almond Bars

Ingredients
- 100 g almond kernels
- 20 g pistachio kernels
- 2 egg whites
- 400 g sugar
- 0.5 tsp cinnamon powder
- 0.5 tsp ground cardamom
- 200 g couverture (milk chocolate)
Instructions
- 1. Line a cake pan with baking paper.
- 2. Roughly chop the almonds and pistachios.
- 3. Whip the egg whites into stiff peaks.
- 4. Keep the egg whites cold.
- 5. Put the sugar in a pot.
- 6. Add 100 milliliters of water.
- 7. Add cinnamon and cardamom.
- 8. Bring the mixture to a boil once while stirring constantly over high heat.
- 9. Remove the pot from the heat.
- 10. Stir until no more bubbles form.
- 11. Repeat the process of boiling and cooling about eight times.
- 12. Ensure the sugar liquid thickens but does not caramelize.
- 13. Pour the sugar liquid into a bowl.
- 14. Mix in the egg whites using a hand mixer.
- 15. Gently fold in the nuts.
- 16. Quickly spread the mixture into the prepared pan.
- 17. Smooth the surface.
- 18. Let the confection rest for about one hour.
- 19. Remove the confection from the pan.
- 20. Cut it in half.
- 21. This creates two bars.
- 22. Melt the chocolate coating in a hot water bath.
- 23. Let the chocolate cool slightly.
- 24. Coat the confection with the chocolate.
- 25. Allow the chocolate to set.
- 26. Cut the bars into pieces about one centimeter wide.
- 27. Serve the bars.
