  2. 2. Roughly chop the almonds and pistachios.
  3. 3. Whip the egg whites into stiff peaks.
  4. 4. Keep the egg whites cold.
  5. 5. Put the sugar in a pot.
  6. 6. Add 100 milliliters of water.
  7. 7. Add cinnamon and cardamom.
  8. 8. Bring the mixture to a boil once while stirring constantly over high heat.
  9. 9. Remove the pot from the heat.
  10. 10. Stir until no more bubbles form.
  11. 11. Repeat the process of boiling and cooling about eight times.
  12. 12. Ensure the sugar liquid thickens but does not caramelize.
  13. 13. Pour the sugar liquid into a bowl.
  14. 14. Mix in the egg whites using a hand mixer.
  15. 15. Gently fold in the nuts.
  16. 16. Quickly spread the mixture into the prepared pan.
  17. 17. Smooth the surface.
  18. 18. Let the confection rest for about one hour.
  19. 19. Remove the confection from the pan.
  20. 20. Cut it in half.
  21. 21. This creates two bars.
  22. 22. Melt the chocolate coating in a hot water bath.
  23. 23. Let the chocolate cool slightly.
  24. 24. Coat the confection with the chocolate.
  25. 25. Allow the chocolate to set.
  26. 26. Cut the bars into pieces about one centimeter wide.
