🍽️ Crunchy Marzipan Balls with Pine Nuts

Ingredients
- 500 g almond kernels
- 300 g powdered sugar
- 2 untreated lemons (zested rind)
- 200 g pine nuts
Instructions
- 1. Pour boiling water over the almonds.
- 2. Peel the skin off the almonds.
- 3. Dry the almonds thoroughly.
- 4. Let the almonds dry on the heater overnight if possible.
- 5. Grind the almonds very finely the next day.
- 6. Knead the ground almonds with powdered sugar, lemon zest, and 6 to 8 tablespoons of water.
- 7. Make sure a firm marzipan dough forms.
- 8. Shape small balls from the dough.
- 9. Roll the balls in pine nuts.
- 10. Preheat the oven to 200 degrees.
- 11. Bake the balls in the hot oven until golden yellow.
- 12. Watch the baking time closely; it should be 10 to 20 minutes.
- 13. The baking time depends on the thickness of the balls.
- 14. Store the finished marzipan balls in an airtight container.
