  1. 1. Preheat the oven to 150 degrees Celsius with top and bottom heat.
  2. 2. Line one or two baking sheets with baking paper.
  3. 3. Beat the egg whites together with the orange juice and a pinch of salt until very stiff.
  4. 4. Add the sugar and vanilla sugar gradually and stir them in.
  5. 5. Gently fold the nuts into the mixture.
  6. 6. Fill the mixture into a piping bag fitted with a star nozzle.
  7. 7. Pipe small mounds with a diameter of about 1.5 centimeters onto the tray.
  8. 8. Bake the cookies in the oven for about 20 minutes until they are light brown.
