  1. 1. Put durum wheat semolina, lard, a small amount of water, salt, and one tablespoon of olive oil into a bowl.
  2. 2. Knead the ingredients into a soft and pliable dough.
  3. 3. Roll out the dough thinly.
  4. 4. Cut out round circles with a diameter of about 10 centimeters.
  5. 5. Mash the almonds together with sugar and orange blossom water into a fine paste.
  6. 6. Check the consistency of the almond mixture.
  7. 7. If the mixture seems too dry, stir in another tablespoon of orange blossom water.
  8. 8. Spread a small amount of the almond mixture onto half of the dough circles.
  9. 9. Fold the empty halves of the dough circles over the filled halves.
  10. 10. Press the edges of the dough pockets firmly together.
  11. 11. Fry the pastries in hot olive oil until golden brown.
  12. 12. Let the finished pastries drain on thick kitchen paper.
  13. 13. Let the pastries cool slightly.
  14. 14. Roll the pastries in powdered sugar.
  15. 15. Serve the pastries immediately.

  22. 22. Bake the almond cigars in the preheated oven for 15 minutes until golden yellow.
  23. 23. Whisk powdered sugar and milk together to form a liquid sugar glaze.
  24. 24. Let the baked almond cigars cool down.
  25. 25. Brush the cooled almond cigars with the sugar glaze.
  26. 26. Alternatively, you can dip the almond cigars briefly into the glaze.
  27. 27. Let the glazed almond cigars drip dry on a wire rack.
  28. 28. Let them dry completely.
