🍽️ Crunchy Almond Balls

Ingredients
- 400 g almond kernels (ground)
- 200 g sugar
- 2 eggs
- 1 tbsp grated lemon zest
- 1 tsp cinnamon
- 200 g pine nuts
- 1 egg yolk
Instructions
- 1. Beat the eggs together with the sugar until the mixture is creamy and airy. Then knead in the ground almonds, the grated lemon zest, and the cinnamon until you have a soft and easily moldable dough.
- 2. Shape the dough into small balls the size of a walnut. Dip each ball first into the beaten egg yolk and then roll it in the pine nuts. Gently press the balls flat and place them on a baking sheet lined with baking paper.
- 3. Bake the balls in the preheated oven at 220 degrees Celsius on the middle rack for about 10 minutes.
