🍲 Creamy Almond Grape Soup

Ingredients
- 1 onion
- 2 garlic cloves
- 200 g celeriac
- 200 g peeled almond kernels
- 2 tbsp olive oil
- 800 ml chicken broth
- 200 ml coconut milk
- 100 g seedless grapes
- salt
- cayenne pepper
- pepper (from the mill)
Instructions
- 1. Peel the onion and the garlic clove.
- 2. Dice the onion and garlic very finely.
- 3. Peel the celery.
- 4. Dice the celery very finely as well.
- 5. Heat oil in a pan.
- 6. Slowly roast the almonds in the hot oil.
- 7. Stir constantly.
- 8. Remove the pan from the heat once the almonds are golden brown.
- 9. Add the diced onion and garlic to the pan.
- 10. Add 150 grams of the finely diced celery.
- 11. Let the vegetables sweat briefly.
- 12. Deglaze the mixture with chicken broth.
- 13. Add the coconut milk.
- 14. Let the soup simmer gently for approx. 15 minutes, stirring occasionally.
- 15. Wash the grapes.
- 16. Drain the grapes well.
- 17. Puree the soup until smooth.
- 18. Season the soup with salt.
- 19. Season the soup with cayenne pepper.
- 20. Divide the soup among bowls.
- 21. Sprinkle the grapes over the soup.
- 22. Season the grapes with pepper.
- 23. Serve the soup.
- 24. Serve white bread on the side if you like.
