  1. 1. Separate the eggs. Carefully separate the egg yolks from the egg whites.
  2. 2. Beat the egg whites with a mixer until they form stiff peaks.
  3. 3. Whisk the remaining egg white, the egg yolks, and all other ingredients together in a separate bowl.
  4. 4. Gently fold the yolk mixture into the egg whites until you have a uniform batter.
  5. 5. Line a baking tray with baking paper.
  6. 6. Spread the mixture evenly onto the tray to a thickness of about 1 cm (finger-thick).
  7. 7. Preheat your oven to 100 degrees Celsius (75 degrees Celsius if using fan/convective mode).
  8. 8. Place the tray in the oven and dry the mixture for 2 to 2.5 hours.
  9. 9. Remove the diamonds from the oven and let them cool down completely.
  10. 10. Cut the cooled sheet into diamond shapes measuring approximately 9 x 5 cm using a large knife.
  11. 11. Lightly dust the diamonds with powdered sugar.
  12. 12. Melt chocolate coating in a water bath until it is liquid.
  13. 13. Optionally decorate one single diamond with the melted chocolate, for example with a small musical note shape.
