  1. 1. Add agar-agar (a plant-based gelling agent), the almond drink, the sugar, and the slit vanilla pod to a pot. Bring the mixture to a boil and let it simmer gently for about 2 minutes.
  2. 2. Remove the pot from the heat and let the mixture cool down slightly. Remove the vanilla pod and pour the milk into small bowls or glasses. Refrigerate for at least 4 hours until set.
  3. 3. Wash the pear before serving, cut it into quarters, and remove the core. Dice the pear pieces into small cubes. Finely chop the pistachios.
  4. 4. Top the finished almond pannacotta with the pear pieces and pistachios. Drizzle with honey and serve immediately.
