🍽️ Crunchy Almond Orange Cookies

Ingredients
- 2 untreated oranges
- 60 g dark chocolate
- 2 tbsp cocoa powder
- 125 g flour
- 50 g ground almond kernels
- 175 g sugar
- 0.5 tsp cinnamon
- 1 pinch ground cloves
- 1 small pinch ground allspice
- 3 egg yolks
- 150 g butter
- 1 egg white (for brushing)
Instructions
- 1. Wash the oranges under hot water and pat them dry.
- 2. Finely grate the orange peel.
- 3. Finely chop the chocolate.
- 4. Mix the cocoa powder with the flour.
- 5. Sift the flour mixture onto a clean work surface.
- 6. Mix the chocolate coating, the almonds, 100 grams of sugar, half of the orange peel, the cinnamon, the cloves, and the allspice.
- 7. Add this mixture to the flour work.
- 8. Form a well in the center.
- 9. Place the egg yolks into the well.
- 10. Cut the butter into small pieces.
- 11. Place the butter pieces on the edge of the flour mixture.
- 12. Coarsely chop all ingredients with a spatula until crumbs form.
- 13. Quickly knead the crumbs together with your hands to form a shortcrust dough.
- 14. Divide the dough into two halves.
- 15. Shape the halves into two rolls with a diameter of about 4 centimeters.
- 16. Preheat the oven to 190 degrees Celsius with top and bottom heat.
- 17. Line two baking sheets with baking paper.
- 18. Mix the remaining sugar with the rest of the orange peel for decoration.
- 19. Brush the frozen dough rolls with the beaten egg white.
- 20. Quickly roll the rolls in the orange sugar.
- 21. Slice the rolls into pieces about 5 millimeters thick.
- 22. Place the cookies on the prepared baking sheets.
- 23. Bake the cookies in the oven for 10 to 12 minutes.
- 24. Remove the baking sheets from the oven.
- 25. Lift the cookies off the baking sheet along with the baking paper.
- 26. Let the cookies cool down.
