  1. 1. Place the almonds in a bowl and cover them with boiling water until they float. Let them sit for a few minutes until the skin starts to loosen.
  2. 2. Drain the almonds in a colander and rinse them briefly with cold water to stop the cooking process.
  3. 3. Hold an almond by the blunt end between your thumb and index finger and press firmly so the skin splits and slides off easily.
  4. 4. Mix the cream cheese with lemon juice, salt, and pepper. Grease a hemispherical mold with a little oil, press the cheese into it, and turn it out onto a plate lined with lettuce leaves.
  5. 5. Insert the peeled almonds closely together with the blunt side into the cheese to create a hedgehog-like appearance.
  6. 6. Decorate the dish with halved cherry tomatoes.
