Ingredients
- 400 g almond kernels (unpeeled)
- 400 g cream cheese
- 2 tbsp lemon juice
- salt
- pepper (from the mill)
- salad leaves
- cherry tomatoes
Instructions
- 1. Place the almonds in a bowl and cover them with boiling water until they float. Let them sit for a few minutes until the skin starts to loosen.
- 2. Drain the almonds in a colander and rinse them briefly with cold water to stop the cooking process.
- 3. Hold an almond by the blunt end between your thumb and index finger and press firmly so the skin splits and slides off easily.
- 4. Mix the cream cheese with lemon juice, salt, and pepper. Grease a hemispherical mold with a little oil, press the cheese into it, and turn it out onto a plate lined with lettuce leaves.
- 5. Insert the peeled almonds closely together with the blunt side into the cheese to create a hedgehog-like appearance.
- 6. Decorate the dish with halved cherry tomatoes.
