🍽️ Citrus Mandarin Salad with Marinated Seaweed

Ingredients
- 1 pack dried Wakame algae (56 g, Asian market)
- 10 g ginger
- 1 clove garlic
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 4 tbsp peanut oil
- 4 tbsp sesame seeds
- 2 chicory heads
- 4 mandarins
Instructions
- 1. Place the wakame seaweed in a bowl.
- 2. Cover the seaweed with warm water.
- 3. Let the seaweed soak for 5 to 10 minutes.
- 4. Peel the ginger and grate it finely.
- 5. Peel the garlic clove and press it through a garlic press.
- 6. Mix the grated ginger and pressed garlic in a separate bowl.
- 7. Add the soy sauce to the ginger-garlic mixture.
- 8. Add the rice vinegar to the mixture.
- 9. Add the peanut oil to the mixture.
- 10. Add the sesame oil to the mixture.
- 11. Stir all the dressing ingredients well.
- 12. Remove the soaked seaweed from the water.
- 13. Add the seaweed to the dressing mixture.
- 14. Add a little bit of the seaweed soaking water to the mixture.
- 15. Let the seaweed marinate for about 30 minutes.
- 16. Wash the chicory thoroughly.
- 17. Separate the individual leaves from the chicory.
- 18. Peel the mandarins all around with a sharp knife.
- 19. Cut the mandarin fruit flesh into small pieces.
- 20. Squeeze the juice from the remaining mandarin peels.
- 21. Add the squeezed juice to the marinated seaweed.
- 22. Arrange the marinated seaweed and mandarin pieces in bowls.
- 23. Drizzle the remaining liquid as dressing over the salad.
- 24. Arrange the chicory leaves around the salad.
- 25. Serve the salad.
