🍰 Quick Lemon Mandarin Cake

Ingredients
- 175 g flour
- 1 pinch baking powder
- 65 g sugar
- zest of 0.5 lemons (organic)
- 100 g butter
- 1 tbsp cold water
- 2 cans mandarin oranges
- 1 packet clear glaze powder (for cooking)
Instructions
- 1. Mix flour, baking powder, sugar, and lemon zest in a large bowl.
- 2. Add the butter in small pieces and the water to the bowl.
- 3. Chop the mixture roughly with a knife until dry crumbs form.
- 4. Quickly knead the crumbs together by hand to form a smooth dough.
- 5. Grease a fruit cake tin with some fat.
- 6. Roll out the dough on a lightly floured surface to about 28 centimeters in diameter.
- 7. Place the dough into the prepared tin.
- 8. Press the dough flat into the tin with lightly floured hands.
- 9. Prick the base several times with a fork.
- 10. Preheat the oven to 190 degrees (170 degrees fan or gas mark 3).
- 11. Bake the cake base in the oven for about 25 minutes.
- 12. Allow the baked base to cool completely.
- 13. Drain the mandarins in a sieve and catch the juice.
- 14. Top up the caught juice with water until you have exactly 250 milliliters of liquid.
- 15. Prepare the cake glaze powder according to the package instructions, but without sugar.
- 16. Place the cooled base on a cake plate.
- 17. Top the base with the drained mandarins.
- 18. Pour the prepared cake glaze evenly over the mandarins.
- 19. Let the cake stand until the glaze has set.
