🍰 Fragrant Mandarin Semolina Bread

Ingredients
- 320 g semolina
- 250 g sugar
- 1.5 tbsp cinnamon (ground)
- 1 tsp coriander (ground)
- 0.25 tsp clove powder
- orange and mandarin peel (1 tbsp zest each, unwaxed)
- orange juice (125 ml each)
- mandarin juice (125 ml each)
- 175 g currants
- 80 g sultanas
- 125 ml olive oil
- 320 g flour
- 0.5 cube yeast (approx. 20 g)
- 1 tsp sugar
- 60 ml orange juice
- flour (for kneading if needed)
Instructions
- 1. Put semolina, sugar, cinnamon, ground coriander, ground cloves, and the grated peels of the citrus fruits into a large bowl.
- 2. Mix the dry ingredients from step 1 well together.
- 3. Put half of the orange juice and half of the mandarin juice into a separate bowl.
- 4. Add the currants and sultanas to the juice mixture.
- 5. Cover the bowl with the fruit mix.
- 6. Let the fruit mixture steep for one hour.
- 7. Sift the flour into a clean bowl the next day.
- 8. Press a small well into the center of the flour.
- 9. Crumble the yeast into this well.
- 10. Add some sugar and two tablespoons of lukewarm water to the yeast.
- 11. Gently stir the yeast ingredients.
- 12. Cover the bowl.
- 13. Let the yeast starter rise in a warm place for 30 minutes.
- 14. Add the remaining orange juice and 60 milliliters of warm water to the yeast starter.
- 15. Knead everything into a smooth dough.
- 16. Cover the dough again.
- 17. Let the dough rise in a warm place for one hour.
- 18. Take the semolina-fruit mixture out of the refrigerator.
- 19. Knead the yeast dough together with the semolina-fruit mixture.
- 20. Check the consistency of the dough.
- 21. If the dough is too soft, knead in three to four handfuls of flour.
- 22. Let the dough rise again, covered, for 30 minutes.
- 23. Lightly dust a work surface with flour.
- 24. Divide the dough into three equal portions.
- 25. Shape each portion into an oval loaf.
- 26. Place the loaves on a baking sheet lined with parchment paper.
- 27. Cover the loaves.
- 28. Let the loaves rise for another 30 minutes.
- 29. Preheat the oven to 180 degrees Celsius.
- 30. Bake the breads for about 45 minutes.
- 31. Let the breads cool down completely.
- 32. Wrap the breads securely for storage.
