  1. 1. Wash the potatoes thoroughly and boil them in salted water with the cumin for about 20 minutes until tender.
  2. 2. Wash the spring onions, trim the ends, and slice them into rings.
  3. 3. Melt the butter with the oil in a hot pot. Add the drained and briefly dried potatoes and fry them for about 5 minutes until golden brown. Stir in the spring onions with the drained capers, season with salt and pepper, and fry for another 1 to 2 minutes.
  4. 4. Preheat the oven to the grill setting.
  5. 5. Slice the cheese, place it on the potatoes, and melt it in the oven under the grill for 2 to 3 minutes.
  6. 6. Serve the Manchego potatoes sprinkled with parsley.
