🍰 Crunchy Mocha Macaroons

Ingredients
- 60 baking wafers (approx. 3 cm diameter)
- 3 egg whites
- 2 tsp lemon juice
- 150 g powdered sugar
- 200 g ground, peeled almond kernels
- 3 tbsp cold mocha
- 100 g pine nuts
Instructions
- 1. Preheat the oven to 150 degrees Celsius fan-forced.
- 2. Line a baking tray with baking paper.
- 3. Distribute the wafer biscuits evenly on the tray.
- 4. Whisk the egg whites together with the lemon juice until very stiff peaks form.
- 5. Slowly sprinkle the powdered sugar into the mixture.
- 6. Continue whisking until the mixture is firm enough to hold its shape and looks glossy.
- 7. Gently fold in the almonds, pine nuts, and coffee.
- 8. Fill the mixture into a piping bag fitted with a large, round nozzle.
- 9. Pipe small mounds of the mixture onto the wafer biscuits.
- 10. Bake the macaroons in the preheated oven for about 15 minutes.
- 11. Let the macaroons cool down completely on a wire rack.
